First thing I practiced in the water is body-dragging. The kite pulls you through the water but without a board, you just drag along. This exercise is actually quite a lot of fun in itself.
The tricky part of kite-surfing is to fly the kite in such a way that it provides a steady amount of pulling power. Since the board is too small to support your weight by itself, it only floats through speed. So you need more power at the beginning to get out of the water and then a steady pull. If the power fades, you sink back into the water again.
The really wicked part is to control the kite when you've fallen over, since it will start to make all kinds of power dives and drag you around even more. So prepare to swallow some water.
Sadly, the weather conditions in southern germany don't suit kite-surfing very well, since there is little wind or it is very gusty (strong power fluctuations).
